Executive Chef, Mr. B’s Steakhouse
When Chef Dane Baldwin started working at age 15 in the meat department at Sendik’s Food Market in Whitefish Bay, he couldn’t have known he’d one day be Executive Chef at one of the top steakhouses in the Midwest, Mr. B’s – A Bartolotta Steakhouse. It was that first experience learning from the store’s butchers, as well as working as a dishwasher at the nearby Fox Bay Cinema and thus getting a “sneak peek” into the kitchen, that the seed was planted to make his career in the restaurant industry.
Dane officially began his cooking career in 2002 and has spent his time cooking and learning in different Milwaukee restaurants. His first cooking job was at Gil’s Café, where he started as a prep cook and was quickly promoted to line cook and then Chef de Cuisine. During this same time, he also held cooking positions with Dancing Ganesha, Barossa, and the Milwaukee Art Museum, since he was eager to learn as much as he could as quickly as he could.
He joined The Bartolotta Restaurants when Bacchus opened in April 2004. His time spent working under James Beard Award winning chef, Adam Siegel, set the foundation for Dane for what it means to lead a culinary team. In addition, that first year at Bacchus, Dane won Back of the House Employee of the Year. In November 2005, he moved to Carnevor, another top Milwaukee steakhouse, where he spent nearly six years, first as a line cook and ultimately as their Chef de Cuisine.
Dane returned to Bartolotta’s in 2012 as Executive Sous Chef at Harbor House, where he spent time working with Chef Zach Espinosa and learning about all things seafood, further rounding out his culinary expertise. Dane joined the team at Mr. B’s in early 2014 and was promoted to Executive Chef a few months later. He says he loves what a continuous classroom the kitchen is, and how it involves all senses and sciences. He thrives on learning from and teaching those around him.
Dane lives with his wife, Anna, and their two daughters, Estelle and Eloise, on Milwaukee’s East Side.
